My A.I.P. Journey…..

Life has been overwhelming lately.

An alien has invaded my body, and I have been trapped, screaming for help, but no one could hear me. I couldn’t even hear me!

Trapped in my body, trapped in my mind, just plain old trapped. Anyone feel me on this?

My thyroid numbers have been going down, but it hasn’t felt like it.

I knew it was time to get help, so that’s what I did! I got HELP!

I went and saw a Functional Medicine Doctor a few weeks ago, and it was the wake-up call that I so desperately needed. Then we left 2 days later for a 2 week stint in Europe….

(Cue the shitty eating, and self-confidence issues.)

So here I am, all crazy with my jet lagged self, starting a new adventure that I had to share with you all.

Monday I started a 30 day journey with an AIP Elimination Food Plan, and let’s be real, food is an issue for me, and was terrified to start.

(For those of you that aren’t familiar, AIP stands for Auto Immune Protocol. It is a way of elimination eating to heal the gut and other auto immune conditions, like Thyroid Conditions. I will be removing everything I love, so bear with me as I have a tiny pity party over here! I am saying goodbye to all things gluten, grains, dairy, legumes, nuts, nightshade veggies, soy – see why I’m a bit sad? But the truth is, I am already sad, so it’s time to change the attitude about food LIZ!!!! 😉 )

I’m not terrified of the food that I cannot eat, I’m terrified of FAILING. This was my big revelation this week. I am afraid of failing, because I have done it SO well in the past, and those limiting beliefs and fear were holding me back from the change I so desperately need!

So here I am, facing those crazy food fears, day two of the journey half way through.

I am committed to this, I am committing to all of you, I am committing to sharing the ups and downs with you all.

I know this will be 1000% worth, I just might need you all to remind of this when I want a spoonful of Justin’s Maple Almond Butter or a slice of grass fed cheese on my burger! 😉

As I always say to my clients in my Fit Clubs….

You have to want change MORE than you want to stay the same. And I hit my rock bottom last week, on a beach in Greece.

I want to fell good, have energy to workout with my girl Autumn Calabrese, get rid of the constant bloat and digestion issues, get my self-confidence back, see food as FUEL!!!

So, get ready for a ride friends, I’m about to go ALL in with you!

Simple & Clean Chinese Inspired Dinner

OK, so who doesn’t love a great Chinese take-out dinner. The amazing smells that seep from those white boxes, the salty flavors, the acid reflux….. 😉

So, here’s the deal…. Most Chinese take-out is loaded with gluten thickeners, additives, preservatives and MSG – EEWWWW!! (Said in my best Jimmy Fallon voice! 😉 )

When I cleaned up my diet, went gluten free, and mostly Paleo, I was really craving those dishes…. And thank goodness for Danielle Walker from Against All Grain. I may be pretty good in the kitchen, but I am not to the point of being able to create my own dishes, and let’s be real, she’s a freaking genius! ❤

Here is my take on her Ginger Chicken & Broccoli from her 2nd book {Meals Made Simple}

ingredients

*3 TBS ghee or unrefined coconut oil, divided

*6 cloves of garlic; 3 minced, 3 peeled

*1 1/2 TBS peeled, grated fresh ginger (Ginger can be bought and stored int he freezer in a plastic bag for future uses!)

*2 heads of organic broccoli, trimmed into florets

*1.5 lbs of organic boneless, skinless, chicken thighs, trimmed of fat and cubed. (Do yourself a favor, and ask your butcher to trim up your meat and cut into cubes. You can thank me later!! 😉 )

*1 Cup Coconut Aminos (These are the coconut version of Soy Sauce, no soy in this house, EVER, and this stuff is AMAZING!!)

*1/4 tsp sea salt

2 large egg yolks

directions

  1. Heat 2 tablespoons oil or ghee in a deep skillet for medium-high heat.
  2. Add in the garlic & ginger, stir for 30 seconds.
  3. Add in the chopped broccoli. continue cooking and stirring for about 5 minutes, until the broccoli is a bright green color. Season with 1/4 tsp sea salt.
  4. Transfer veggies and garlic to a plate and return skillet to heat, and in remaining 1 TBS of oil or ghee.
  5. Add in cubed chicken and cook. Stir frequently, for 8-10 minutes, until chicken is browned and cooked through.
  6. Using a slotted spoon, transfer chicken to the plate with the broccoli. Return pan to the burner.
  7. If there is less than 1/4 cup of liquid in the pan, add in water or chicken broth to make about 1/4 of a cup.
  8. Pour in coconut aminos and bring to a light simmer.
  9. Beat both egg yolks in separate bowl. Temper yolks by SLOWLY spooning 1/2 cup of the hot coconut aminos into eggs while whisking constantly. (I find that adding in one tablespoon at a time, while whisking, works best to make sure you don’t scramble your eggs!)
  10. Once you have about 1/2 a cup of hot mixture whisked into eggs, pour that back into pan. Stir constantly for 3 minutes to thicken sauce.
  11. Add back in the chicken and veggies, stir to coat. Cook for an additional 7-10 minutes to thoroughly cook the broccoli and chicken.

 

Feel free to serve over brown basmati rice or cauli rice, it’s amazing plain as well!

Hammer & Chisel: Meal Plans and more!

So, my next big adventure begins on Monday and I’m really excited, nervous, and in full on planning mode!! Santa came early for me this year, and I’m STOKED!!

I have not been this committed to a new workout program since I did The 21 Day Fix back in May of 2014! (Mind you I have done P90X3, Insanity Max:30, 21 Day Fix Extreme, PiYo, and Cize – but I never incorporated the nutrition and meal plans with them!)

So, in preparation for the big start on Monday, I have been putting together specific meal plans to use with my color coordinated containers so I can REALLY stay on track!!

Here is my Week One Meal plan for you all to start looking at and feel free to use it to plan your weeks as well. (Change it up if you need too! I can’t eat eggs or yogurt, so you will never see those as a RED option for me! I don’t eat gluten either, more on that later!)

A lot of my recipes are coming from the Hammer & Chisel Nutrition book, FIXATE and Against All Grain! I’ll be sharing a couple of my weekly dinner recipes from each week, so stay tuned for that!

Scrumptious Homemade Salad Dressings

OK, let’s be honest – who doesn’t love an amazing Ranch Dressing?! We dunk our pizza in it, dip our carrots in it, drizzle it on our salads…. But, do you know what ingredients are hiding in those ranch dressings you are buying from the store??

C-R-A-P

Yes, I said CRAP!! And a whole lot of it, like MSG, soybean oil, Yeast Extract, canola oil and more.

That Ranch dressing just kicked your sweet salads butt, and it isn’t helping yours either! 😉

So, how about some lovely, homemade dressings that will actually compliment your salads and your waistline?! 😉

Herb Ranch Dressing

1 cup mayo or Greek yogurt

½ cup full fat coconut milk (NO Carrageenan)

2 cloves garlic, minced

3 Tbs chopped parsley

2-3 Tbs of your favorite chopped herbs (Dill, chives, etc.)

1 Tbs lemon juice

½ tsp onion powder

½ tsp sea salt 

Mix all dressing ingredients in a bowl, store in fridge for up to 5 days.

{Place all salad ingredients in bowl, mix together, and then drizzle with dressing}

Honey Mustard Dressing

{21 Day Fix Approved}

½ cup plain Greek yogurt

2 TBS Dijon Mustard

3 TBS raw honey

3 TBS rice vinegar

¼ cup EVOO

Sea salt to taste

{combine first 4 ingredients in a bowl and mix well, slowly add oil, whisking constantly until well blended.}

Lemon Dijon Dressing

{21 Day Fix Approved}

1 large egg yolk

1 TBS Dijon Mustard

¼ tsp sea salt

½ tsp ground black pepper

4 TBS fresh lemon juice

1.5 tsp finely chopped lemon peel

¼ cup EVOO

{place first 6 ingredients in a blender or food processor, blend till smooth. Slowly add oil, blend continuously until well blended.}

Experimenting with Fixate

So, I’ve kinda fallen off the wagon when it comes to cooking dinner! I actually LOVE it, a lot – so I am not sure what’s gotten into me these past few months? I guess life just does that to you, but I am back and ready to bring you all some amazing recipes. 🙂

While in Nashville last week, I got to buy a few copies of Autumn’s new cookbook “FIXATE”. It is 101 recipes that are ALL FIX approved, it breaks down the container amounts and shows all the nutrition info as well.

Last night I made my first recipe from the book “Beef Stew with Sweet Potatoes” – and honestly it was SO SO good!! The hubby and I kept looking at each other going “this is good, like really good!”

So, grab your aprons, and get ready for a delicious, clean AND Gluten Free meal!

Liz’s Changes

(Same container counts)

Follow all directions from the recipe picture above, and add in these changes below if you so choose!

* 1 lb Grass Fed Organic Beef Stew Meat (This will serve about 2-3 people, 2 servings each. I ate 2 servings)

*2-3 carrots

* 2-3 cups beef broth (this makes it less soupy, and intensifies the flavors SO much more! Add more broth along the way if needed)

***I found that after 2 hours of the stew cooking, it was not ready yet, so I cooked ours for about 4-5 hours. This can be done on the stove or in a crockpot.
